Processing Method
This lot undergoes a highly controlled and innovative processing approach designed to enhance clarity and aromatic precision:

Harvesting: Minimum 90% ripe cherry selection

Floating: Removal of underripe, overripe, and defective cherries

Oxidation: 24 hours in food-grade plastic drums

Pulping: Dry pulping of cherries

Post-Pulp Oxidation: 18 hours, followed by a 45°C wash to induce thermal shock

Fermentation: 36 hours below 25°C with selected yeast

Final Wash: 5°C to stabilise and seal fermentation

Drying: 76 hours in mechanical dryers at ~38°C

About the Producer
Edinson Argote is part of a new generation of Colombian producers redefining specialty coffee through innovation and perseverance. After early life challenges and 18 months in military service, he entered coffee through a buying station in Acevedo, Huila.
Through hands-on experience and mentorship across progressive farms in Cauca, Edinson developed a meticulous approach to processing and quality. Today, he operates Quebraditas Coffee Farm with his family, focusing on exotic varietals such as Gesha, Bourbon Sidra, Ombligon, Eugenoides, Chiroso, and Laurina, with a clear vision centred on precision and continuous improvement.
