Process:
This lot was processed using an extended natural method, designed to enhance fruit sweetness and complexity while maintaining clarity.
Cherries are selectively hand-picked, ensuring only fully ripe fruit is harvested.
They undergo a controlled extended fermentation period before drying, allowing deeper fruit character to develop.
The whole cherries are then dried slowly on raised beds under the Rwandan sun, promoting even drying and sugar absorption from the fruit.
Once fully dried, the coffee is milled and carefully sorted for consistency and quality.
The result is a fruit-forward, structured cup with layered sweetness, gentle warmth, and a clean finish.
